Xbox game pass include EA play free of charge, you can see what games is for you. Yes you can cancel any time, the moment you sub, you can cancel the renewal on the spot, the remaining time stays no matter what since you paid for it. If you want certain games that only on Origin, you get EA play via Origin instead of Steam. Your 2nd question, if you sub to EA play via Steam, your EA play only applies to games that via Steam only, so if a game not on Steam, then it's not part of EA play on Steam.
To answer 1st question, yes you can play with other users via Xbox pass on PC, Steam, Epic, and Origin, they all use Origin as the DRM to connect with each other, and if EA does cross play via console with their EA Games they too will be able to play with as well.
